
I found this recipe clipping from our supermarket's CompuCook Kitchens.
Kauai Kabobs - Serves 4
1 (14 oz) can coconut milk (I used reduced fat organic)
1 tbsp soy sauce
1 tsp sugar
3 cloves, garlic, minced
1/2 tsp hot sauce
juices of 2 limes
2 tbsp creamy peanut butter
1 1/2 tbsp boneless, skinless chicken breasts, cut into 2" chunks
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 orange bell pepper, cut into chunks
salt & pepper
Method1. Combine coconut milk, soy sauce, hot sauce, garlic, sugar, juice of 1 lime and peanut butter in a saucepan.
2. Bring to a boil over medium heat. Reduce the heat and simmer for about 10 minutes, till slightly thickened. Divide the sauce into 2 parts
3. Heat broiler. Thread chicken and veggies alternating on skewers. Brush kabobs with half of the above sauce and then place on a baking sheet.
4. Broil for 4 minutes per side or till chicken is cooked.
5. Sprinkle remaining lime juice. Serve with remaining sauce.
Note -1. Discard the sauce which is used to brush the kabobs.
2. I also added a pinch of turmeric powder in the coconut milk mixture.
